Aylesbury Escargots began in 2010 and are based at the foot of the Chiltern Hills in Wendover Buckinghamshire, having our Hatchery and processing unit in central Aylesbury.
The business is family owned by Michael and Sophie Wharton. We Free Range Farm Helix Aspersa – edible snails.
The snails are grown in a natural environment with plants grown for them to eat and hide under - the happiness of the snail is reflected in the quality of the meat produced. We believe we supply the finest fresh free range Escargots and Snail Caviar. We are proud to be supplying some of the countries finest chefs.
Our Escargots are tender and succulent. Snails have a wonderful earthy, mushroom taste.
Grown, harvested and prepared correctly they have the power to stand-alone as a dish and are a food that is very underestimated. Snails are not only fabulous for their taste and texture but also their nutritional qualities; snails are high protein low fat meat.
Our Snail Caviar known as 'Escargot Pearls' are absolutely beautiful, not only visually – they have a wonderful delicate flavour, almost creamy, they create woody, fern and mineral tones all brought to you in a burst on the palate.
These tiny eggs, which taste slightly earthy, foresty and have a mineral finish, can be marinated in herbs. In the past they have been known as "Pearls of Aphrodite" for their supposed aphrodisiac quality.
Chefs through Europe are already serving the highly prized delicacy, which centuries ago starred in banquets for wealthy Romans, Egyptians and Greeks.
